Cucumber Salad

Ingredients

Single Batch

  • 1 large waxed cucumber, peeled and sliced thinly
  • 1 teaspoon salt
  • 1 Tablespoons + 1 1/2 teaspoon white vinegar
  • 3/4 teaspoon granulated sugar
  • 1/8 teaspoon paprika
  • 1/8 teaspoon white pepper
  • 1/4 clove garlic, minced
  • 1/2 white onion, sliced thinly
  • 1/2 cup sour cream
  • paprika for garnish

Double Batch

  • 2 large waxed cucumber, peeled and sliced thinly
  • 2 teaspoon salt
  • 3 Tablespoons white vinegar
  • 1 1/2 teaspoon granulated sugar
  • 1/4 teaspoon paprika
  • 1/4 teaspoon white pepper
  • 1/2 clove garlic, minced
  • 1 white onion, sliced thinly
  • 1 cup sour cream
  • paprika for garnish

Directions

In a bowl, sprinkle cucumber slices with salt, stir to coat, and chill for 1 hour.

Mix vinegar, sugar, paprika, white pepper, and garlic; set aside.

Squeeze liquid from cucumbers, return to bowl, and discard liquid.

Add vinegar mixture, onions and sour cream to bowl; stir to coat.

Sprinkle additional paprika over top.

Chill for 1 to 2 hours.
